Lemon Dill Salmon

List of ingredients:

4 six ounce salmon steaks, with 4 sheets of aluminium foil.
4 carrots, sliced.
1 yellow squash, sliced thinly.
¼ cup of lemon juice.
¼ cup of melted butter.
2 teaspoons of dried dill weed.
1 teaspoon of lemon pepper.

Method:

Preheat your oven to 450°F (230°C).

Spray the aluminium foil with non-stick cooking spray.

Place each steak in the middle of each sheet of foil.

Place the slice of carrot around the salmon.

Top the salmon with slices of the squash.

Combine the other ingredients; then spoon over top of the salmon steak and veg.

Bring up the sides of the foil and double fold to form a packet, leaving space for heat circulation inside.

Cook for about 20 minutes and serve.

Mushroom Casserole

Ingredients list:

1 lb of button mushrooms.
1 large onion, thinly sliced.
½ cup of heavy cream.
½ cup of sour cream.
¼ cup of Parmesan cheese.
4 tablespoons of butter: 2 tablespoons melted, 2 tablespoons for cooking onions.
1 tablespoon of all-purpose flour.
½ teaspoon of salt.
¼ teaspoon of pepper.

Instructions:

In a suitably sized skillet, saute the sliced onion in 2 tablespoons of butter over a medium heat for 6 minutes.

Add the buttons mushrooms and saute for another 6 minutes.

Blend the all-purpose flour, salt and pepper with the onions and mushrooms.

Mix the heavy cream and sour cream together, then gradually add to the skillet, stirring well.

Pour into an oven proof casserole dish. Top with Parmesan cheese and drizzle with 2 tablespoons of melted butter.

Bake at 350F for 25 minutes.

Serve as desired.

I had a cheesey garlic bread - it turned out really nice.

1 large loaf of Italian bread.
4 garlic cloves, chopped.
4 tablespoons of butter, softened.
¼ cup of grated mozzarella cheese.
¼ cup of grated parmesan cheese.
1 teaspoon of dried basil.
1 teaspoon of dried parsley.
½ teaspoon of crushed red pepper flakes.

Cooking instructions:

Preheat your oven to 350F.

Cut the loaf of bread in half, lengthways.

Mix the chopped garlic with the softened butter; spread the mixture over each half.

Sprinkle mozzarella evenly over both halves.

In a small bowl, mix the parmesan with remaining dry ingredients; sprinkle the mixture evenly over the bread.

Place the bread halves on an ungreased baking sheet.

Bake until the cheese is melted and bread gas turned golden brown (takes about 10-15 minutes).

Slice and serve warm.

My aunt and uncle came over for an evening meal last night, and really loved the peach pie recipe I made for dessert. They're coming over again in a months time when they're back in Alabama - I think I'll make something with salmon next time.

Any thoughts on which one from the linked site?
